The world's most expensive spice by weight is saffron

Saffron costs £5,000–£10,000 per kilogram. Each crocus flower produces just three stigmas, which must be hand-harvested. It takes roughly 150,000 flowers to produce 1kg of saffron. Iran produces around 90% of the world's supply.
